Have a think about hand patterns practiced in the Siu Lin Tou, yes they develop internal force but they also develop other types of force and skills. Skills and force that would work well against larger opponents.
Then you have Cham Kiew, this set develops excellent foot skill and shifting of the body to use another understanding of the centre line theory, that is not having to go straight through the person centre line but avoiding it. This is excellent against boxers and other fighters that make use of straight attacks.
Then you have Phew Chee, this has a lot of finishing moves in it (as do the other sets) and helps you develop skills to travel along the line of an attack, attack from the sides and strike decisively.
When we talk about controlling yes taming is an excellent choice to control the fight, but as you say against a stronger opponent this could be more tricky as it is with fast opponents. Once your skills have developed this may not be such a problem but also may not be your first choice of defense or attack.
Choe Family Wing Choon has many facets, I'll post more about it later as I am off to work now, needless to say though that it is a formidable fighting art.
